Protein Muffins: With Raspberry and White Chocolate

Ingredients

  • 1/2 (55g) cup oat flour

  • 2 tbs (45g) plant yog

  • 40g vegan protein powder ( sub 1/3 cup oat flour + 2 tbs maple syrup)

  • 1 tsp baking powder

  • 1 tsp nut butter of choice

  • 1 tsp maca powder

  • 1/2 + 2 tbs plant milk

  • 1/2 chopped white chocolate

  • 1/3 cup frozen raspberries

Directions

  • Preheat oven 180°c
  • Combine all ingredients then fold in the blueberries then pour into muffin molds.
  • Bake for 25-30 mins, chill in mold for 5 mins then remove and place on a baking
  • Drizzled some more white choc for the toppings!
